Ratto Family Napa Cabbage Salad


1 head Napa cabbage-sliced

4-6 green onions, sliced

6 tablespoons chopped or sliced almonds

4 tablespoons sesame seeds

1-2 cup crunchy croutons

1 package of Romen noodles


½ cup olive oil

3 tablespoons sugar

3 tablespoons vinegar

½ teaspoon pepper

½ teaspoon salt


Start by slicing the napa cabbage from top to bottom in ½ inch thick slices. Then cut the slices into smaller bite-size pieces and place in a large bowl. Next, slice green onions into about ¼ inch pieces and place in bowl with cabbage. Toast the sesame seeds in a dry pan and put aside to cool. Take a bag of Romen noodles and without opening the bag, crunch the raw noodles into little pieces. When the noodles are completely crunched, open back and remove seasoning packet that comes with the noodles. Pour the raw noodles into the cabbage bowl. Sprinkle sesame seeds and croutons into the bowl and mix ingredients together.

Add all the dressing ingredients in a mixing bowl completely so there is no separation visible. Then pour dressing over salad and mix well. For best possible flavor let the salad absorb the dressing before serving. Serves 6-8.
