Mamma Ratto's Mashed Celery Root with Garlic


2-3 Celery Roots

4-5 Garlic cloves

*12 oz. evaporated milk

*Low fat options

Substitutes for evaporated milk:

1 ½  cup milk or

14 ½ oz. Low sodium and fat chicken broth


Peel Celery Root.  Cut into 1”-2” cubes.  Add Celery Root cubes to ½ pan of boiling water.  Lower heat to medium.  Cook 35 minutes or until cubes are soft.  Drain water.  Add garlic.  Cook for 2 minutes on low heat.  Stir Constantly.  Add remaining ingredients and with electric mixer blend until smooth. Salt and pepper to taste. Serves 4.
