1 teaspoon olive oil
3 small zucchini, thinly sliced
2 tablespoons chopped fresh basil
1 garlic clove, minced
Heat oil in heavy medium nonstick skillet. Add zucchini, 1 tablespoon basil and garlic, then stir-fry for about 5 minutes until zucchini is just tender. Season to taste with salt and pepper. Remove from heat. Sprinkle with remaining basil. Serves 2.
