Description
Native to the Mediterranean, Cardoni is a member of the artichoke family. Cardoni is distinguished by its celery-shaped stalks and soft, spiky leaves. A healthy cardoni stalk is grey-green. It is not crisp like celery, but heavy and moist. Italians like the Ratto Bros. enjoy cardoni raw, baked, stewed, deep-fried, and sautéed.

Care and Handling
Store the cardoni head in the crisper section of a refrigerator wrapped in plastic. Because a cardoni head is so tall it may need to be cut in half crosswise to get it to fit into the refrigerator. Cardoni should last a week or so in the refrigerator. Cooked refrigerated cardoni will keep several days.
Ratto Bros. follows and recommends the guidelines set forth by the Federal Department of Agriculture (FDA) about commercial and home users washing all produce thoroughly under running water before eating, cutting, or cooking.
