Ideal temperature is 33 F with 95% relative humidly to optimize storage and life. A shelf-life of 21-28 days can be expected at this temperature. Placing Belgian Endive on ice for retail display will cause discoloration. Freeze damage weakens the leaves and can lead to more rapid bacterial decay.
