Description
Beets are grown commercially in the United States in 31 states. Beet greens are a good source of riboflavin, iron and vitamins A and C. They can be boiled, baked, grated and added to salads, or pickled. Beet greens are delicious steamed and eaten with butter and lemon juice.

Care and Handling
Ideal temperature: 33 F. Should be kept in high humidity(98-100%) to avoid wilting from water loss. Keep in refrigeration and mist to prevent drying. Beets are somewhat sensitive to freezing but can be lightly frozen without serious damage.
