6 thick slices bacon
1 large white onion, coarsely chopped
2 pounds RATTO BROS. Curly Mustard Greens
1 tablespoon cider vinegar
½ red pepper, diced
Salt and freshly ground black pepper to taste
Fry bacon until crisp. Drain on paper towels and crumble. Set aside. With the drippings in the pan, sauté the onion and red pepper until limp and then add the greens and cook, stirring from time to time, until wilted and tender 5 to 6 minutes. Season well with salt and pepper. Garnish with the bacon. Add the cider vinegar to taste. Serves 6.
