Description

A healthy, ripe tomatillo is recognizable by its light brown, tight-fitting husk and should have firm flesh within. To cook this member of the tomato family, remove the husk and wash the tomatillo thoroughly. The acidic, lemony flavor of tomatillos can be experienced raw in salads or guacamole. Tomatillos can also be cooked, which enhances flavor and reduces texture to a soupy consistency great for sauces.

Tomatillos stored at room temperature will last about 1 week. For longer storage life, keep tomatillos at 41 to 50 F with a relative humidity of 80% to 90%. Tomatillos are very sensitive to ethylene gas so do not store tomatillos with vegetables and fruits that give off ethylene gas such as apples and pears.
