Ratto Bros. offers Radicchio, a member of the chicory family that is traditionally imported from Italy. This lettuce is characterized by it’s reddish-purple hue and bitter-sweet flavor. It is often used as a colorful accent in salads but its sturdier leaves can be served as grilled appetizers.

Care and Handling

Ideal temperature is 33 F and 98 to 100 % relative humidity. Radicchio should be pre-cooled soon after harvest. Pre-cooling is best done by vacuum cooling because it is more effective and rapid than hydro-cooling. Radicchio is highly perishable and deteriorates rapidly with increasing temperature.
