Description
Native to the Mediterranean, Cardoni is a member of the artichoke family. Cardoni is distinguished by its celery-shaped stalks and soft, spiky leaves. A healthy cardoni stalk is grey-green. It is not crisp like celery, but heavy and moist. Italians like the Ratto Bros. enjoy cardoni raw, baked, stewed, deep-fried, and sautéed.

Care and Handling
Store the cardoni head in the crisper section of a refrigerator wrapped in plastic. Because a cardoni head is so tall it may need to be cut in half crosswise to get it to fit into the refrigerator. Cardoni should last a week or so in the refrigerator. Cooked refrigerated cardoni will keep several days. |
